Local New Adventure
YJDKIY is branching out! Courtesy of our very own Salisbury Post, I have a new blog for all the world to see! Emily's Green Kitchen will cover a lot of the stuff you see here, plus I have a few tricks up my sleeve for blog baby #2. Check it out and share it with the world!
And, what better occasion, than on the evening of my healthy living blog debut to have this for dinner.
I'm not proud of it, but this is what fast food on The Ave looks like. At first glance, you thought you were on the wrong blog right? But wait! It's not as bad as it looks, and it was ready in 20 minutes.
1. Annie's Homegrown Organic Whole Grain White Cheddar Mac & Cheese
(one of my go to brands for quick, healthy meals!)
1.5 Ketchup....let's not go there!
2. Birds Eye Steamfresh Baby Broccoli Blend
(note, no sauce!)
3. Trader Joe's Breaded Cod
(half a serving is plenty, plus its just not that bad compared to its kin, and Pacific Cod from Alaska is on the best choice list)

Hey Big Flipper!
YJDKIY had a leftover butternut from WH and I was bound and determined to find a new recipe for it!
Butternut, Feta & Cilantro Quesadillas step right up. Sounds like a weird combination, no? Peel and dice the squash and boil for about 10 minutes.
Honestly, I've never boiled squash before. I've roasted and baked and microwaved and sauted, but never boiled. It worked though!
Add in about 1/2-3/4 cup (depending on your flavor preference, but I will say...GO HEAVY!) chopped fresh cilantro. This is also not a place to substitute dried, as the butternut needs all the flavor it can get.
Mash it all up, with a little cumin and garlic salt, then mix in just a little feta.
I purposefully left out the jalapenos, but I did acquire some jalapeno flour tortillas!
Place in a lightly pam'd pan on med-high heat and spoon some of the squash mix, top with feta and the other tortilla. Cook until golden and warm.
I love my big ol' Hajalte flipper from Ikea!
Served up with chopped red cabbage and salsa.

Veggie Lasagna
A Classic! Hard to believe it hasn't made it to the blog, but the last two lasagna attempts were Mama Pea's Quinoa Zucchini Lasagna and Summer Lasagna. This version is perfect for a cold and rainy December night!
Combine some low fat ricotta and fat free cottage cheese with some grated mozza, basil, oregano and rosemary. Plus, a tiny tiny pour of egg whites.
Thin slice some veggies.
Salad spinner some torn fresh spinach
For ease of spreading, YJDKIY combines the pepper and onion into the cheese mix.
My little grunge puppy had to endure some taunting in order to taste the cheese and carrots!
Boil 12 whole wheat noodles
Cue Pandora Christmas station (optional ingredient) and begin the layering process.
Repeat one more time using other half of ingredients, finishing with a layer of noodles, a little sauce and grated mozza and parm.
Bake for 45-60 minutes at 400.
Someone couldn't wait to let it cool!
Don't burn your tongue! Do take a nap in your new Christmas bed beside the tree afterward!
