YJDKIY had a leftover butternut from WH and I was bound and determined to find a new recipe for it!
Butternut, Feta & Cilantro Quesadillas step right up. Sounds like a weird combination, no? Peel and dice the squash and boil for about 10 minutes.
Honestly, I've never boiled squash before. I've roasted and baked and microwaved and sauted, but never boiled. It worked though!
Add in about 1/2-3/4 cup (depending on your flavor preference, but I will say...GO HEAVY!) chopped fresh cilantro. This is also not a place to substitute dried, as the butternut needs all the flavor it can get.
Mash it all up, with a little cumin and garlic salt, then mix in just a little feta.
I purposefully left out the jalapenos, but I did acquire some jalapeno flour tortillas!
Place in a lightly pam'd pan on med-high heat and spoon some of the squash mix, top with feta and the other tortilla. Cook until golden and warm.

Served up with chopped red cabbage and salsa.
