This dinner started like many of YJDKIY dinners and quickly progressed away from any form of existing recipe to basically whatever I wanted to thrown in (the idea started from dinner spinner in this post)!
Saute in olive oil: onion, garlic, red yellow and green pepper and carrot. Add stock, or, since I didn't have any, water plus a boatload of spices (cumin, adobo, Mrs. Dash lime, garlic powder, chili powder, and pepper).
Add black beans and diced tomatotes. Add pre-cooked quinoa. Boil off some water and add about 2/3 bottle of beer. Simmer long.
Topping options include fresh cilantro, avocado, sour cream and/or sharp cheddar.
Empty bowls.
Full bowl...yum! Unfortunately its too hot to eat soup in here.
