I followed the Six O'Clock Scramble recipe to a t, except for quantities because y'all know I don't measure things! So from Aviva Goldfarb, here it is:
- Coarsely chop/mash one can of black beans (I recommend draining extra well because they were still a little runny)
- In a bowl, add to that 1T of tomato paste (I thought this was weird but it totally made the whole recipe),1/2 c minced red onion, 1/2 c plain breadcrumbs and some oregano, garlic salt, 1 T balsamic vinegar (also weird but flavorful in the end!), 1 egg lightly beaten, pepper
- Shape into patties and coat all sides with yellow cornmeal
- Pan fry in EVOO for a few minutes on each side until tasty
- Serve with toppings of choice! Pictured: baby spinach, red pepper, red cabbage, red onion, cheddar cheese
