It's beginning to look a lot like...

...vacation! This fridge is empty!*


I rounded up the salvageable ingredients, plus some WH Microgreens we hadn't tried yet to see what I could concoct.


Plus some flavor courtesy of these characters.


Mash up the avocado and mash in about 1/2-3/4 can of white beans (WHY have I not thought to make guac like this before? You can't taste the beans but it gives it a little extra protein and fiber filling). Add in a small amount (~1/4 c.) shredded cheese, I used jack. Add in the spices in desired amount (I went heavy on the garlic and light on everything else).


In a separate bowl, grate red cabbage, carrot and a tiny bit of onion (I totally overdid it...blechk!). Add white vinegar, spicy brown mustard and some agave (not pictured, they were camera shy) and mix to form a slaw-like consistency. Layer on a flour tortilla in the following order.


All together now...


For photographing, add toothpick to hold the roll!


*yes, I know they are dirty, but cleaning out the veggie drawers is on my after holiday to-do list.
