Shrimp and veggies and couscous and feta!
Medium dice onion, zucchini and red pepper and place in a bag of sorts to shake. Add EVOO, white wine vinegar, garlic powder, pepper, oregano, thyme and a pinch of salt.
All at once: saute shrimp in white wine vinegar, thyme and oregano (4-5 min); in a separate pan, saute zuch, pepper, onion with same spices minus vinegar (8-10 min); boil pearl couscous (8 min, I could only find a package mix, so I just used the couscous and tossed the seasoning packet), you could use any kind of broth, but I ended up just using water.
On the side, whisk together white wine vinegar and same spices. Add this to the couscous for the last 2 minutes.
Then combine everything in one pot.
Serve hot topped with crumbled feta! And there you have the last meal of 2010!
