Barley & Lentil Stew with Chard

Another yummy winter soup!
(note: oranges are not part of the ingredients list!)

Soak some dried lentils in water for 20-30 minutes. This was about 2 cups I think.

Dice up 3 carrots, 1 large yellow onion and several cloves of garlic.

Such a mess are onion and garlic!

Saute in EVOO in a soup pot until translucent.

Add cumin and low sodium vegetable broth (or water) and bring to a boil. Add barley and simmer 10 minutes. Add lentils and simmer 30 minutes.

Add chopped chard and simmer just until wilted. Add more cumin, garlic powder, salt & pepper to taste.

Serve with a dash of parmesan if desired.
