Potato Pie

YJDKIY really likes quiche. It's so easy to make and gets everything in one dish. However, what I don't like is the extra cholesterol in the eggs or the gross stuff in store-bought pie crusts. So I decided to give a try to egg beaters and potato crusts.


This was one too many.


Grated, and drained of as much water as possible (very important!). Plus some grated onion, and a tablespoon of eggbeaters. The Canine Component got a big surprise when a shred of this fell on the floor, looking oh-so like grated mozza. Zut alors she said!


I had way too much, it would have been better thinner, but smoosh it into a pie plate like a crust. Topped with pepper and a little garlic salt.


Bake for about 45 minutes. The slightly burned/slightly not done ratio of the side to bottom would be fixed if the overall thing was thinner, but I was trying to cram it in.


Then add your filling. In this case, my main ingredient was CSA turnip greens. They're so prickly!


Plus carrots and pepper (I sauted these first for faster cooking), nutritional yeast, and a little grated cheddar.


Bake for about 30 more minutes. Someone was so hungry I couldn't get a photo before a piece went MIA.  Not the prettiest presentation...


But, tasted pretty decent, especially served with a side of juicy watermelon!
