I didn't really follow the recipe, so here's what I did instead:
Cut up Earthfare (read: veggie fed, local, not scary raised) chicken breast into cubes and marinate for a while in lite coconut milk.
Drain excess liquid and dump into heated skillet with EVOO. Saute/simmer until chicken begins to cook and add another cup of the coconut milk, simmer until almost done.
Add 2-4 tablespoons of apricot jam (or whatever that is similar, the recipe called for mango chutney) and cook until all liquid is gone.
Served with lemon-steamed broccoli side!
