Spontaneous Baking

YJDKIY was bored making coffee this morning and thought, "I'll make muffins!" because in some odd aligning of the universe, I had all the ingredients at my fingertips.


This recipe came with the Organic Soft White Wheat Flour from Hoffner Farms, well, it came with our basket, so I don't know who it actually came from! I followed it pretty closely, with some teeny mods.


Isn't the flour pretty? It still has the germ mixed in.


1 c. flour, 1 c. oats, 1/3 c. brown sugar, handful of sunflower seeds, cinnamon, nutmeg, cardamon. And, in a separate bow, 2 egg beaters, 1/2 c. soy milk, vanilla, and...oil. I wanted to try coconut.


Unfortunately, due to the inside temperature of a balmy 59 degrees, it had taken a solid form. doh.


It looks exactly like the fake Christmas snow!


To remedy the situation, I fashioned a mini double boiler, only nothing was boiling.


It melted up nice!


Mix dry ingredients and add 1/2-1 c. blueberries, mine were frozen. Then, add in wet ingredients.


Spoon evenly into muffin cups and bake at 400 for 20 minutes (17 would have been better).


These were, intentionally, hearty and not really sweet at all.


So, I busted out a WH#2 special item: Muscadine Jelly from Sandy Creek Farm.


Mmmmm tasty. They were on the petite side. I had three.
