Veggie Lasagna

A Classic! Hard to believe it hasn't made it to the blog, but the last two lasagna attempts were Mama Pea's Quinoa Zucchini Lasagna and Summer Lasagna. This version is perfect for a cold and rainy December night!

Combine some low fat ricotta and fat free cottage cheese with some grated mozza, basil, oregano and rosemary. Plus, a tiny tiny pour of egg whites.

Thin slice some veggies.

Salad spinner some torn fresh spinach

For ease of spreading, YJDKIY combines the pepper and onion into the cheese mix.

My little grunge puppy had to endure some taunting in order to taste the cheese and carrots!

Boil 12 whole wheat noodles

Cue Pandora Christmas station (optional ingredient) and begin the layering process.

Repeat one more time using other half of ingredients, finishing with a layer of noodles, a little sauce and grated mozza and parm.

 Bake for 45-60 minutes at 400.

Someone couldn't wait to let it cool!

Don't burn your tongue! Do take a nap in your new Christmas bed beside the tree afterward!
